Hi guys! This week I've tried Keenan's cake recipe for my family and they all loved it so much, they almost have eaten the whole cake in one day haha.
Anyways, as this recipe made a good one in my family, I was thinking why not sharing this with you guys.
Keenan shared her family's cake recipe with Barbie Magazine for the 100th issue.
I will just write the recipe down below and also put the magazine scan where the recipe is from so you will have both the picture and the written recipe, feel free to print the one you prefer!

Ingredients:
❤ 2 cups sugar
❤ 1 3/4 cups plain flour
❤ 2 teaspoons baking soda
❤ 1/2 cup vegetable oil (or butter)
❤ 1 teaspoon vanilla
❤ 1 teaspoon baking powder
❤ 2 eggs
❤ 1 cup buttermilk
❤ 1 cup coffee
(+ my little note: if you don't have buttermilk, just put some lemon juice in regular cow milk and wait for 5 minutes)
(++ for making this a vegan cake, just use 6 tablespoons of water and 2 tablespoons chia seeds (put them all together and wait for about 10 minutes), as an egg substitue + use some plant based milk with lemon as the buttermilk)
Method:
❤ Preheat the oven.
❤ Combine sifted dry ingredients in a bowl.
❤ In a separate bowl beat eggs, buttermilk, coffee, oil and vanilla with an electric blender at a moderate speed for two minutes.
❤ Blend dry and wet ingredients just until mixed.
❤ Grease a 13"x9"x2" pan. Bake at 180° for 45 minutes to an hour.
❤ Test cake is ready by inserting a skewer in the middle. When it comes out clean, your cake is ready!
TIP: We've decorated our cake with frosting and coloured sweets, but Keenan's fave is vanilla ice-cream!
